batch no. 033 saw us take a long overdue return to Scotland to introduce Simple Things Fermentation, founded by Philip Sisson in the city of Glasgow. Phil is passionate about natural carbonation for his beers, which means everything is can conditioned and naturally carbonated (rather than your fizz being manually added via CO2).

“We like it for lots of reasons”, says Phil, “mainly because there’s less of a ‘carbonic bite’ than with forced carbonation, which allows for the flavour to come through more, and the bubbles are smaller, which gives a softer, smoother mouthfeel”.
